I fell in love with the cuisine and culture of Peru after hiking the Inca Trails to Machu Picchu and travelling the coast and country side with my best friend, Rodrigo, from Lima. We found ourselves sitting in a small cafe in Cusco, when Rodrigo asked me, "What do you think you will do 10 years from now?" As I was indulging on my "comida," I quickly responded, "I am going to open a restaurant and call it Cafe Cusco!" The thought never left my mind and as the years went by I finally decided to make the dream a reality and open Cafe Cusco on C-Street with my mother, Claire.
Our beautiful building was built in 1883 by two brothers under the name Bartlet & Bartlet. One brother held a doctor's office on the second floor where our lounge is not located. The main floor was a pharmacy drug store. during the period C-Street was the headquarters for the Frisco Railroad. Many people would have come through our doors since then. However, by the turn of the century the building was abandoned and in much disarray.
By 2010, artist Erik Kinkade oversaw the historical restoration of 234 East Commercial Street. Cafe Cusco opened its doors in July of 2013 and has become a proud member of the Historic C-Street Community and the North side of Greater Springfield.
