DESIGN
Created around a simple concept: to provide an exceptional dining experience regardless of the time, day or weather conditions.
During the day, solar films and fabrics reflect the heat yet open up to the light. Throughout rain, water is captured in translucent roof columns and filtered into our indoor rivers. Whilst the room is vast, indoor palm trees provide intimacy. Air conditioning is reduced to a minimum as cool air circulates in natural cycles to prevent humidity.
Bali based architect firm, Inspiral design studios have created a venue unlike any other. An incredible balance between visual design, eco sustainability and functional working spaces. Alternative materials and unconventional techniques and have come together for the purpose of showcasing the heights of Indonesian talent and craftsmanship.
THE FOOD
The food and flavours at Merah Putih set it apart from any other. Menus and dishes created from traditional regional recipes using the very best locally grown and seasonally sourced products, make every meal as unique as the story behind them.
Separated in sections, the menu at Merah Putih presents an opportunity to discover two unique trends of Indonesian cuisine.
In the ‘traditional’ section, unpretentious simple cooking procedures highlight the refined balance of regional dishes using carefully selected tender meats and home-grown vegetables.
Viewed from an alternative angle, ‘baru’ or 'modern' are culinary creations from a more modern era, challenged with the delicate tastes and aromas of local spice markets and food halls.

THE CHEF: KIERAN MORLAND
At 31 years old, Kieran Morland is already an accomplished executive chef. Having worked alongside some of the biggest names in the restaurant industry, his impressive resume lists some of the world’s most renowned venues.
Positions at Momofuku (NYC), Wapping Project (London), Syracuse (Melbourne), Kudeta (Bali) and most recently, helping shape the newly opened 10 Greek St restaurant in the UK, have made Kieran a chef who not only understands the basic elements of a great dish, but also the finer details that make an exceptional meal.
Kieran’s interest in Indonesian cooking began when his sister relocated from Australia to West Java in the early 90’s. From eating at street carts at a young age, to cooking in one of Bali’s most famous beachfront destinations, Kieran has an unparalleled understanding of Indonesian food.
With his wealth of international experience and clear focus on the exceptional possibilities of regional sourced ingredients, Kieran’s creations will be more than the highlight of your dining experience.
